Banana cake in a 9×13 pan takes about 1 1/2 cups of mashed very ripe bananas (3 to 4 bananas), 2 1/2 cups of flour, 1 1/2 cups of sugar, 2 eggs and 1 cup of buttermilk, baked at 350°F for 30 to 40 minutes. It is lighter and fluffier than banana bread and is finished with a cream cheese frosting.
Use bananas with plenty of brown spots. They are sweeter and mash smoothly, and they are where all of the flavor comes from.
Banana Cake vs. Banana Bread
Banana bread is a quick bread: oil or melted butter, less sugar and a dense loaf. Banana cake creams softened butter with sugar and uses buttermilk and both baking soda and baking powder, so the crumb is soft and even. Spread in a 9×13 pan, the batter bakes in about half the time a loaf needs, and the thin, wide layer stays moist all the way to the edges.
