Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prep the Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  2. Cook the Filling: In a skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain excess fat. Stir in the cooked rice, black beans, corn, salsa, chili powder, cumin, salt, and pepper. Mix well and cook for another 5 minutes.

  4. Bake: Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
  5. Serve: Garnish with fresh cilantro if desired. Serve hot and enjoy your flavorful Mexican stuffed peppers!
