Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons flour
  • 1 cup beef stock
  • 1 cup dark ale
  • 1 teaspoon dried thyme
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Sear the Beef: In a large pot, heat the vegetable oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. Remove from the pot and set aside.
  2. Cook the Vegetables: In the same pot, add the chopped onion and carrots. Sauté until softened, about 5 minutes. Add the garlic and cook for another minute.
  3. Make the Sauce: Sprinkle the flour over the vegetables and stir to combine. Gradually pour in the beef stock and ale, stirring continuously until the mixture thickens. Add thyme, Worcestershire sauce, salt, and pepper.
  4. Combine: Return the browned beef to the pot and mix well. Simmer for about 30 minutes until the beef is tender and the flavors meld together. Let the filling cool slightly.
  5. Prepare the Pie: Preheat the oven to 400°F (200°C). Roll out the puff pastry on a floured surface. Place the cooled beef filling into a pie dish, then cover with the pastry, sealing the edges. Cut a few slits in the top crust for steam to escape.
  6. Bake: Brush the pastry with beaten egg and bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and flaky.
