Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon active dry yeast
  • ¾ cup warm water (about 110°F)
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup cooked and crumbled Italian sausage or pepperoni
  • ½ cup sliced bell peppers (optional)
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 egg (for egg wash)
  • Marinara sauce for dipping

Instructions

  1. Make the Dough: In a bowl, mix flour, sugar, salt, and yeast. Add warm water and olive oil, then mix until a dough forms. Knead for about 5 minutes until smooth. Let it rise for 1 hour, covered.
  2. Prepare the Filling: In a bowl, combine ricotta, mozzarella, cooked sausage or pepperoni, bell peppers, oregano, and garlic powder. Mix until well combined.
  3. Roll Out the Dough: Preheat your oven to 450°F (230°C). Divide the dough into two equal parts and roll each out on a floured surface to about ¼ inch thick.
  4. Fill and Fold: Place half of the filling on one side of the dough, leaving a border. Fold the other side over the filling and press the edges to seal. Use a fork to crimp the edges.
  5. Prepare for Baking: Place the calzones on a baking sheet lined with parchment paper. Beat the egg and brush it over the top of each calzone.
  6. Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown. Remove from oven and let cool slightly before serving with marinara sauce.
